Schinkennudeln ingredients
The base needs eight ingredients, plus diced ham if you want the version with protein.
- Dairy and eggs. 2 cups of heavy cream and 2 eggs.
- Salt and spices. 1/4 teaspoon of salt, a pinch of ground white pepper and a pinch of nutmeg.
- The cheeses. 1/2 cup of shredded Swiss cheese and 1/2 cup of shredded white cheddar cheese.
- The pasta. 1 pound of cooked elbow macaroni.
- Optional ham. 2 cups of diced ham, stirred into the macaroni mixture before baking.
- Baking dish. A 16 by 9 inch baking dish sprayed with nonstick spray, plus foil to cover it.
How to bake Schinkennudeln at home
The dish spends 45 minutes in the oven in two stages, then rests before it is cut.
- Heat the oven. Preheat to 375 degrees F and spray the baking dish.
- Mix the sauce. Whisk the cream, eggs, salt, pepper and nutmeg; toss the cheeses together, set 1 cup aside and stir the rest into the cream.
- Combine and cover. Cook the macaroni until just tender, drain, stir in the cream mixture right away, pour it into the dish and cover with foil.
- Bake in stages. Bake 30 minutes covered, then remove the foil, sprinkle the reserved cheese on top and bake 15 minutes longer.
- Rest and serve. Cool for 10 minutes, cut into squares and serve warm.
One thing to watch: as published, the two cheeses add up to 1 cup, which is the same amount the directions set aside for the topping. That leaves no cheese for the sauce, so most home cooks will want to shred extra before they start.
