Monstropolis dining: an eight-armed sushi chef at Harryhausen's and frozen Blort at Archie's
Disney's culinary team has previewed the food planned for Monstropolis, the Monsters, Inc. land opening at Disney's Hollywood Studios in 2027. Harryhausen's will be a table-service restaurant with an Audio-Animatronics sushi chef, and Archie's Scare Pig Pizza is where Blort, the city's favorite soda, makes its real-world debut.

Food built for monsters that humans will want to eat
The brief was food that feels authentic to monsters while still tasting good to people.
- Unusual questions. The team found itself asking things it never expected to: do monsters slurp, do they chew, and is this too many eyeballs?
- The menu writers. Chef Brian Piasecki, Director of Culinary and Concept Development, and Beverage Director Evan Rosenthal are two of the people creating the menus.
- Working with Imagineers. The culinary team studied Monsters, Inc. and Monsters University with Walt Disney Imagineering, the company's design and build arm.
- The eyeball verdict. The team's answer to the eyeball question: you can never have enough in Monstropolis.

Harryhausen's: an eight-armed sushi chef and ramen
The sushi restaurant from Monsters, Inc. becomes a table-service dining room with its chef built as an Audio-Animatronics figure.
- From the film. Harryhausen's is the sushi restaurant where Mike takes Celia for her birthday in Monsters, Inc., until Boo's arrival empties the room.
- The chef figure. Imagineers are building the head sushi chef as an Audio-Animatronics figure that preps food with eight tentacles in the middle of the dining room.
- More than sushi. The table-service menu will go beyond sushi.
- Ramen in testing. Ramen bowls being explored pair tonkotsu broth and alkaline noodles with fishcake sliced to look like eyeballs, and green eggs.

Rosenthal said the goal is a menu that works for younger and older guests alike, with something added that gets people talking and brings them back because it is both delicious and entertaining.
Archie's Scare Pig Pizza and the first taste of Blort
The quick-service pizzeria comes from Monsters University and brings that film's soda into the real world.
- Campus hangout. Archie's is styled as the pizza place where generations of Monsters University students gathered with friends after class.
- Who Archie is. Archie is the Fear Tech scare pig mascot that Mike and Sulley chase across campus in Monsters University.
- Blort's debut. Blort, one of the most popular soft drinks in Monstropolis, will be served for the first time here; no human has seen or tasted it.
- A frozen idea. One possibility is a purple frozen version of the soda topped with a Scream Apple Foam.

Rosenthal said the team kept the neighborhood pizza shops they loved as kids in mind, then looked for ways to add an unexpected element of fun.
Opening in 2027, with menus still being developed
Disney has given a year but no date, and the dishes it described are still ideas.
- Menus not final. Disney presents the ramen bowls and the frozen Blort as items being explored, not a finished menu.
- Two moods. Harryhausen's is pitched as a lively night out on the town, Archie's as a favorite hangout for students.
- More to come. Disney says further Monstropolis details are still to be shared.
Our take. Harryhausen's is the only table-service restaurant announced for Monstropolis, so it is the one to watch for a reservation date; Archie's quick-service counter will be the walk-up choice.
