Gideon's Pumpkin Cookie Returns to Disney Springs for September as the Bakery Posts Its Cake Slice Calendar
Gideon's Bakehouse has published its September 2026 menu, and the Pumpkin Bread Chocolate Crumb cookie is back at Disney Springs for this month only. The daily cake slice calendar puts 21 flavors on rotation, with a Pumpkin Caramel Double Frosted Cake on Wednesdays and Saturdays, alongside two Disney Springs exclusives: the morning Coffee Cake cookie and the sunset-only Dark Coffee Cake.

Gideon's Bakehouse has posted its September 2026 menu, and the pumpkin is back. The Pumpkin Bread Chocolate Crumb cookie returns to the Disney Springs case for this month only, the daily cake slice calendar puts 21 flavors on rotation across the week, and a Pumpkin Caramel Double Frosted Cake takes the Wednesday and Saturday slots. Two cookies on the board are sold only at the Disney Springs shop, and one of them does not come out until sunset.

The pumpkin cookie is back for one month
The headline item is the Pumpkin Bread Chocolate Crumb, which the bakery calls its favorite pumpkin spice obsession and has brought back for another year. It is filled with real pumpkin and the shop's house pumpkin spice blend, hides a little chocolate inside, and is finished with a heavy layer of pumpkin butter crumbs. The menu page lists it as available this September only, so the window closes when the month does.
Like every Gideon's cookie, it weighs in at nearly half a pound. Walk-up guests can buy up to seven cookies per person, which the bakery points out is close to three pounds of cookie. Anyone who wants more than that has to preorder, and preorders are only taken at the original East End Market shop in Orlando, about 20 miles from the resort.
The September 2026 cake slice calendar
The cake slices are the other reason the monthly menu matters. Each one is a three-layer cake with buttercream between every layer, big enough to share. Both Gideon's locations serve the same three flavors on any given day, the lineup changes daily, and a new schedule is published each month on the bakery's menu page and pinned to the top of its Instagram. Slices are first come, first served with a limit of two per person per flavor, and each flavor is gone for the day when it sells out.
| Day | Slices |
|---|---|
| Sunday | Chocolate Coffee Toffee, Chocolate Chip Marshmallow, Key Lime Pie Cake |
| Monday | Banana Walnut Chocolate Chip Cake, Golden Oreo Cake, Salted Caramel Cake |
| Tuesday | Valentina's Cake, Chocolate Everything Cake, PB & Jelly Cake |
| Wednesday | Pumpkin Caramel Double Frosted Cake, Fluffernutter Cake, Andes Mint Cake |
| Thursday | S'mores Cake, Cookie Butter Buttercream Cake, Chocolate Churro |
| Friday | Peanut Butter Cup, Rainbow Crunch Cake, Carrot Cake |
| Saturday | Pumpkin Caramel Double Frosted Cake, Original Red Velvet Cake, Cookies & Cream Cake |
The Pumpkin Caramel Double Frosted Cake is the seasonal entry, and it appears twice, on Wednesdays and Saturdays. The bakery notes the schedule applies to both locations daily, runs while supplies last, and can change if an ingredient runs short.
There is also an off-menu wrinkle. Every so often the bakers release what the shop calls a Super-Secret Slice, a flavor that is not advertised in the store and can only be ordered with a password announced on the bakery's Instagram or Facebook. Nothing on the September page says whether one is coming this month, so that stays a watch-the-feed item.
Two cookies sold only at Disney Springs
Two flavors on the current board carry an "Only at Disney Springs" label. The Coffee Cake cookie is a buttery vanilla bean cookie filled with cinnamon strudel and topped with the bakery's double-baked butter crumbs. It goes on sale every morning and is sold until it runs out, and the shop built it to pair with its Pumpkin Chai Nitro Cold Brew. East End Market guests can only get it by preorder.
The Dark Coffee Cake is the same cookie on a chocolate cookie base, and it keeps stranger hours. The bakery ties it to Signora Pipistrello, its bat mascot, and sells it only after dark: it comes out each evening strictly at sunset and stays until it sells out. Sunset in Orlando falls between roughly 7:15 and 7:45 pm across September, so guests who want one should check the day's sunset time before joining the line.
The everyday cookie case
The rest of the small batch lineup is the permanent roster. The Original Chocolate Chip is the recipe the whole bakery grew out of; the shop says it took 15 years to get right, packs in several chocolates and more than one vanilla, and bakes to a texture close to raw cookie dough. The Pistachio Toffee Chocolate Chip pairs chocolate chips with toffee pieces and lightly salted pistachios, and is the flavor the bakery calls its most sophisticated. Cookies & Cream is a soft vanilla bean cookie stuffed with hand-cut Double Stuf pieces and coated in crushed cookies. Peanut Butter Crunch is built on a dough that is mostly peanut butter and topped with candied peanuts.
The Triple Chocolate Chip actually uses five chocolates, Callebaut and Ghirardelli among them, with ganache poured straight into the dough during mixing. The Banana Bread Chocolate Chip, once a limited run, is now permanent: a vanilla bean cookie blended with real bananas, dark and semisweet chocolate, candied walnuts and crushed banana chips. Gideon's Bites, quartered cookies dipped whole in chocolate, are sold in mystery-flavor Bite Bags in the shops.
One flavor on the menu page is not a Disney Springs item at all. The Candied Walnut Chocolate Chip is walk-up only at East End Market on what the bakery calls Walnut Wednesday, or by preorder there, so a Disney Springs guest hunting for it will come up empty.
The Buzz
Gideon's publishes a fresh slice calendar every month, and the September edition is the one that flips the case to fall: it is the first month the pumpkin cookie and the pumpkin cake are on the board, and the bakery has already said the cookie leaves when September ends. With the shop's own Halloween cookies listed as October only, this is a short window between two seasonal menus, which is why the schedule is being passed around among Walt Disney World fans planning September trips.
How the line works at Disney Springs
The bakery is candid on its own location page that the Disney Springs shop runs more like a theme park ride than a bakery. Doors open at 10 am, but the line typically starts forming at 9 am when the parking garage opens. When the line grows too long the shop switches to a virtual queue, which it says is active on most days: sign-up is in person only, at the staff table to the right of the front door under the gargoyle, and guests get a text when it is their turn to check in at the return line. International guests who cannot receive texts are given a return time instead.
Waits vary by day. Tuesdays and Thursdays often do not need a virtual queue at all, Mondays are hit and miss, and Friday through Sunday the bakery quotes two to five hours through the virtual queue, with the wait list often filling by about 7 pm. Its rule of thumb: if the parks are slammed, so is the bakery. Arriving early also matters for selection, since limited edition items sell out first, and the shop cuts off the line before closing time because a full line takes about 30 minutes to serve.
Hot Cookie Hour runs from 2 pm to 3 pm and again from 7 pm to 8 pm every day, though the bakery admits it can be tricky to hit when the virtual queue is running. Delivery, shipping, whole cakes and preorders are not offered at Disney Springs at all.
What is benched until October and beyond
The bottom of the menu page lists the out-of-season cookies, which the bakery says are there only to build anticipation. Two of them come with dates. The Frankenstein, a Halloween cookie made from candy pieces, crushed Oreo Double Stuf and chocolate, topped with hand-placed M&M's, is October only, and the Bride of Frankenstein, baked in the same mold with white chocolate, Golden Oreos and M&M's, is available for preorder every day of October alongside it. The Eternal Flame, a spiced chocolate cookie with chocolate covered cherries, and the Strawberry Delight are both February items.
The rest of the bench has no return date attached: the Key Lime Chocolate Chip, Lemon Poppyseed, Chocolate Churro, Cookie Butter Butterscotch, Orange Pecan Chocolate Chip, Raspberry Dark Coffee Cake, Eternal Flameless, Sea Turtle, Lemon Poppy Crumb, Maple Walnut Chocolate Chip, Peanut Butter Chocolate Swirl, White Chocolate Caramel Macadamia Nut, Cookie Vom Krampus, Kris Kringle, Coffee Toffee Chocolate Chip, Rocky Road, Coconut Caramel, Carrot Cake, Mint Cookies & Cream, Peanut Butter Cold Brew and the Blueberry Lemonade cookie, the newest of the group.
Pumpkin through September, then the Frankenstein takes over
For a September trip the order of operations is simple. The Pumpkin Bread Chocolate Crumb is on the board every day this month and listed as September only, and once October arrives the Frankenstein and its Bride become the seasonal draw. The Pumpkin Caramel Double Frosted Cake only shows up on Wednesdays and Saturdays, so a guest who wants both pumpkin items in one visit should aim for one of those two days, arrive before the 10 am opening, and expect a virtual queue on a weekend. Gideon's Bakehouse first opened at East End Market in October 2016 on an $800 budget with one employee, and the Disney Springs shop, which opened in The Landing in January 2021, is its second location, so this page is the whole of what the bakery sells at Walt Disney World this month.
